In 1961, our father, David, came to the United States in pursuit of the American Dream. Arriving legally through the Bracero Program, he labored in the cotton fields of Arizona. Despite the grueling physical work and harsh desert climate, he embraced the challenge with determination, driven by the hope of building a better future.
The COCINERO
By the late 1960s, he had found his way to the kitchen, working as a cook at a San Diego favorite, Azteca Mexican Food. He stayed busy taking on jobs at Vacation Village (now Princess Resorts) and a local bakery, too. Food was truly in his blood, having grown up in a wonderful family of bakers back home in Cotija, Michoacán.
COTIJA'S SUCCESS
His American Dream really did come true. Today, Cotija’s is a thriving, proud third-generation family business! Over the years, we’ve loved expanding our family and sharing our food with our neighbors in Arizona through Señor Taco and Señor Taco Express.
