Everything started back in 1974 in the beautiful city of San Diego, California. The day that my father, David Ruiz, opened his first restaurant in Point Loma (near Ocean Beach). He offered typical Mexican food and named the business "Cotija’s Mexican Food", using the name of our Mexican hometown: Cotija, Michoacán. My wife and I still own and operate this restaurant today, and it is a privilege to do so as it has become a family heirloom where our family’s legacy began. When I made the decision to expand our business to Arizona, I already had 20 years of experience with "Cotija’s Mexican Food". Although this has been a well-known brand in San Diego for over 40 years, the name is difficult to pronounce and it means nothing to the American public. The name "Señor Taco" was suggested to me by my brother, Roberto Ruiz, and I immediately liked it. This name instantly explains the product while providing a strong connotation with the word "Señor". However, my greatest accomplishment was broadening my horizons and finding success in the state of Arizona with nothing more than faith in our recipes and the experience gained in California. In the year 2000, I decided to open my own restaurant here in Fountain Hills, Arizona with the name "Señor Taco" following as always our philosophy F.H.I. (faith, honesty and integrity), which is the spirit of our companies. With the success of Fountain Hills, I decided to grow the brand in 2007 with Omar Mendoza and opened a second site in East Mesa. So far we have managed to open nine restaurants, with one more coming soon: Apache Junction (Apache Trail & Idaho). Best of all is that most of our locations are operated by a trusted relative who carefully follows our guidelines for quality in using the best products, being personally responsible for all of our staff, and ensuring that the best customer service is provided to our customers. The most important aspect of our restaurants is that we try to preserve the richness of our original kitchen, and maintain our traditional meals without losing our authenticity. Some of our more popular items are our variety of Burritos, and dishes like Chile Verde and Carnitas. Finally, I would like to stress that for the preparation of our dishes we use the best products on the market and maintain the same standards of quality in all of our restaurants.
